New Terminal: A Chain Restaurant After Security?
Drew inquires, "Any hope for a chain restaurant on the secure side [in the new terminal]? Something like a Cinnabon since SGF has so many early morning flights? Or, is that just beyond what our market can support? Thanks!"
We're going to get answers to questions like this in the next few months when we ask food service companies for proposals. Here's what we know so far; and these are generalities:
- Most upscale restaurants, that operate in airports, need about 1.2 million passengers a year before they'll enter the market. We're currently at about 850,000. Can we persuade a company to enter the market early--with the thought that they'll have a leg up when we hit 1.2 million? Maybe...
- With our current customer base we may have to guarantee a company exclusive rights to all food services to make it worth their while. That's the case in the current terminal.
More Questions About Food
On the subject of the new terminal and food, Linda wants to know, "What exactly will be available in food and beverage service, and will it be on both sides of security?"
Right now, we don't know exactly what we'll have. Within the next few months we'll be asking food service companies for proposals and then the airport board will choose one. What we do know is that the recent trend in airport food services is to put most of the effort on the secure side of the security check point. That's because most passengers want to hurry through security and then slow down to eat. Several companies have told us that that is what they would prefer to do. I think we would like to have good choices on both sides of security. I'm not sure how this will shake out.

C. Brown wants to know, "Will the new facility have an upgrade in food & beverage facilities? What we have now is absolutely embarrassing."
We hear you on that and our answer is absolutely "yes."
